Sangiovese di Toscana and complementary red grapes.
Grape yield:
less than 8 tons/hectare.
Harvest:
by hand, with selection of the grapes.
Vinification:
destalking, fermentation with maceration in temperature-controlled stainless steel tanks.
Maturing and ageing:
in temperature-controlled stainless steel tanks, glazed concrete tanks and wooden barrels.
Organoleptic characteristics:
still red wine, deep ruby red in colour with violet highlights, characterised by elegant perfumes with scents of violets and brushwood. Full-bodied and rounded on the palate, with an excellent structure.
Alcohol content:
12,5 – 13,5% vol.
Pairing:
cured meats, red meats, game, roasts and mature cheeses.
