estate-owned vineyard in the Cellori district of San Gimignano.

Position of vineyards and soil consistency:
hills at altitude of 300-330 m above sea level, mixed consistency soil with a tendency towards clay, rich in heavy stone geologic period: Cretaceous.
Vineyards:
4000 plants/hectare, spurred cordon training system.
Grape varieties:
70% Sangiovese, Merlot, Cabernet Sauvignon.
Grape yield:
less than 5 tons/hectare.
Harvest:
hand-picked into crates with careful selection of the grapes and subsequent withering in the fruit room.
Vinification:
destemming and fermentation on skins for 15/20 days.
Maturing and ageing:
in small new wood barrels, for 24 months, with at least six months’ bottle ageing. Release for sale 4/5 years after production.
Organoleptic characteristics:
still red wine with a deep ruby red colour and intense perfumes of forest fruits, spices and vanilla. Potent in the mouth with a lasting and pleasant aftertaste.
Alcohol content:
13,00-14,50% vol.
Pairing:
cured meats, red meats, game, roasts, mature cheeses, also an excellent wine to accompany thoughtful moments.
