hills at an approximate altitude of 330m above sea level, south-westerly exposure, mixed consistency soil with a tendency towards clay, rich in heavy stone.

3400 plants/hectare, planted in 1996, spurred cordon training system.
Grape varieties:
100% Vernaccia di San Gimignano.
Grape yield:
less than 9 tons/hectare.
Harvest:
exclusively by hand, with selection of the grapes.
Vinification:
soft pressing of the whole grapes, cooling of the free-run must and temperature-controlled fermentation.
Maturing and ageing:
on fine lees in temperature-controlled stainless steel and glazed concrete tanks.
Organoleptic characteristics:
still white wine, pale straw yellow in colour, fresh, characterised by elegant, floral perfumes and mineral notes. Savoury, round and persistent on the palate.
Alcohol content:
12,5 – 13,5 % vol.
Pairing:
surf and turf starters, saffron risotto, gnocchi, white meat dishes, fish and fresh cheeses.
