Position of vineyards and soil consistency:
hills at an approximate altitude of 200/250 m above sea level, mixed consistency soils of Pliocene origin.
Vineyards:
3800/4200 plants/hectare, spurred cordon and Guyot training system.
Grape varieties:
Trebbiano Toscano and Malvasia bianca 85%, San Colombano 15%.
Harvest:
by hand into crates with meticulous selection of the grapes.
Withering:
natural, in crates placed in suitable rooms, for at least 3 months.
Vinification:
crushing, soft pressing, natural settling of the must, racking and slow fermentation of the must with native yeast. Maximum yield: 35 litres per 100 kg of fresh grapes.
Maturing and ageing:
in wooden barrels for at least 3 years in the Vin Santo ageing cellar.
Organoleptic characteristics:
golden yellow colour, characteristic, intense and ethereal aroma; harmonious in the mouth, sweet and velvety with notes of nuts, honey and figs, with a pervasive and lingering aftertaste.
Alcohol content:
15,5° minimum.
Pairings:
the perfect companion for mature cheeses and sweet treats like Tuscan Cantuccini and other biscuits, and chocolate desserts.
Serving temperature:
15-18°.
