estate-owned vineyard in the Cellori district of San Gimignano.
Production conformity:
compliant with the regulations of the DOCG Vernaccia di San Gimignano “Riserva” and European production standards for organic wine.

Position of vineyards and soil consistency:
hills at an approximate altitude of 300-320 m above sea level, south-westerly exposure, mixed consistency soil with a tendency towards clay, rich in heavy stone. Geologic period: Cretaceous.
Vineyards:
4000 plants/hectare, spurred cordon and Guyot training system.
Grape varieties:
100% Vernaccia di San Gimignano.
Grape yield:
less than 6 tons/hectare.
Harvest:
exclusively by hand, with selection of the grapes.
Vinification:
soft pressing of cooled grapes with final fermentation in small new barrels for about 10 months.
Maturing and ageing:
at least six months’ bottle ageing, release for sale 3-4 years after production.
Organoleptic characteristics:
still white wine, pale straw yellow in colour with golden highlights, characterised by elegant, complex perfumes. Smooth, round and very persistent on the palate..
Alcohol content:
12,5-13,5 % vol.
Pairing:
surf and turf starters, saffron risotto, gnocchi, white meat dishes, fish, shellfish and all kinds of cheese.
